That jacket you are sewing looks so interesting - I love all the bisecting pieces!
A back stay is to hold the shape of the back and especially useful for loose weave fabrics where the constant movement of the shoulder blades really takes its toll on the fabric. Back stays are great for items that will get a lot of wear or fabrics that really need the extra support. I've made one once, but early in my sewing career when my ambition outstretched my ability. The coat never got worn so can't comment from experience, just theory.
